
Chocolate Covered Banana Pops
With the rising temperatures, you may find yourself reaching into your freezer for a popsicle. However, most popsicles are filled with artificial sugar that can leave you feeling worse. Instead, try this chocolate covered banana pop recipe to keep you cool and satisfied all summer long.
Ingredients:
- 4 ripe but firm bananas
- 8 wooden craft sticks
- 3 tablespoons finely chopped lightly salted peanuts
- 6 ounces good quality dark chocolate, chopped
Directions:
- Peel and cut each banana in half crosswise and insert a craft stick into each half. Place on a tray, cover with plastic wrap, and place in the freezer until frozen, about 3 hours.
- Put the peanuts in a shallow dish. Melt the chocolate in the top of a double boiler over slightly simmering water on the lowest heat possible, stirring frequently. Make sure that the water does not touch the bottom of the top pan. Pour the melted chocolate in a tall glass. Dip each of the frozen bananas into the chocolate, turning to coat, and roll in the peanuts. Put the bananas on a tray covered in waxed paper. Serve immediately, or wrap individually in plastic wrap or waxed paper and freeze for up to two weeks.
